What’s To Eat for Mama?

What’s this, another post about food? Why would she post something else about food. Here’s why.

So I try to be good about what I eat. I can plan my breakfast – yay! I can plan my lunch – woo-hoo! I can plan my snacks – yes! But when it comes to dinner, let’s be truly honest, I’m lazy. I mean, before kids I was doing very well making dinners. But with the kiddos, I just don’t feel like I have time, patience, or the energy. We don’t get home until 5:30 p.m. or so and bedtime is 7:00 p.m. So, I usually just give the kids some hard boiled eggs, yogurt, cereal, cheese, some veggies and/or fruit. My husband and I aren’t usually that hungry when we get home. So after the kids go to bed, we just kinda do a few things and then relax. Who wants to cook?! I sure as heck don’t.

I open the cabinet doors and am like “what do I want to eat?” I end up grabbing some Cheerios. Or sometimes I make cheese nachos.  Or maybe chips and salsa or chips and guacamole. If we have cheese and crackers, it could be that. It may even be popcorn. And then, maybe, if I have some in the freezer, ice cream. Because, who can say no to ice cream! I sure as heck can’t. Ice cream is my weakness. I can eat it every. single. day. But I alas, I won’t.

My kids eat just fine on a normal basis, and as mentioned, I can do fine with my breakfast, lunch and snacks. I do cook a bit more on weekends. Pizza. Chili. Rice, beans and veggies. Maybe a pasta dish. I just can’t get myself to cook on the weeknights. Am I the only one?  Anyone else with me? Let me know what you do for dinner for yourself….or not.
